Finger Lakes 7th race.

The 3 and 8 were practically inseparable the whole run across the thoromation screen. Basically splitting hairs from where I sit so why bother to try. I will bet them both.

Win Bets #3 Celtic Kettle and #8 Scared Money

Maybe you can help?
The local market has fresh purple eggplant in season and on sale cheap.I bought a few nice ones and am looking for a different way to prepare outside of the parm ways with the mozzarella etc.

Any fresh ideas?

Any fresh ideas?

1)eggplant, zucchini, green and red pepper, onion, tomatoes(or canned) and garlic. cut in small piees then saute stew like all for the classic
ratatouille
2) plain grilled, sprinkle some grated cheese or eat with a salad and buffalo mozzeralla. or other vegs.
3) pha 6-11

also riccota cheese soften and mix some finely chopped proscuito ham and mix. slice the eggplant lenghwise thinish. either grill or lightly bread and saute, then some cheese mix and make an roll ups and cook in some marinara sauce or spag sauce
last couple of months i was making roasted eggplant bisque but i didn't care for it. too much like cream of mushoom soup.
4 slice cross and flour the slices. then dip in beaten eggs with a splash of lemon juice, parsley, grated parm cheese, then saute. in this area its called
"Romano" other places call it Roma and i know in NE ohio its called "Francaise"
