Mutton Bustin'
Much like the monkeys riding dogs, it seems state fairs like to showcase things being used as transport that aren't typically ridden. Such is the case with Mutton Bustin'. Known as the 'Toughest Sport on Wool,' little kids ride very fast sheep much like a bull-riding contest.

Watch out for 'ringers' in this sport - like wolves in sheep's clothing. Still looking for photos of ostrich racing. Do they have jockeys too? Ted

Ostrich
Every March there is an Ostrich Festival in the Phoenix area. With riders or pulling chariots. The festival is in celebration of the areas long stanting ostrich farms.
